Chicken Dance

All this week, I will be posting some easy turkey and chicken recipes from my mother, Ann Randall.   These recipes are quick and easy.  Enjoy!


BAKED TURKEY TOSTADAS


• 2 cups cubed cooked turkey

• ¾ cup chunky salsa

• 1 can (4.5 oz.) refrigerated buttermilk biscuits

• Yellow cornmeal

• Shredded cheddar cheese

• Shredded lettuce

• Sour cream

Preheat oven to 400 degrees. Combine turkey and salsa in a bowl; set aside. Separate dough into 6 biscuits. On a surface sprinkled with cornmeal, roll each biscuit into a 4-inch circle. Turn biscuit over to coat both sides. Place biscuits on a greased baking sheet. Spoon turkey mixture on biscuits. Bake 10-12 minutes. Top with cheese, lettuce, and sour cream.



HONEY CHICKEN

• 3 pounds chicken pieces, skinned

• ¼ cup butter

• ½ cup honey

• ¼ cup prepared mustard

• 1 teaspoon salt

• 1 teaspoon curry powder

Melt butter in a baking dish. Mix honey, mustard, and seasonings. Roll chicken in mixture making sure all pieces are coated. Bake in same baking dish at 375 degrees for 1 hour.
