Looking for a different way to serve carrots?

MICROWAVE CARROT CASSEROLE

• 4 cups sliced carrots

• 1 onion, diced

• 3 tablespoons butter or margarine

• 1 can cream of celery soup

• ¼ teaspoon dry mustard

• 1/8 teaspoon pepper

• ½ cup grated or shredded cheddar cheese

• ¼ cup of stuffing mix, mixed with 1 tablespoon melted butter

Cook carrots and onions in 3 tablespoons water and the 3 tablespoons butter in a covered 2 quart casserole for 8-10 minutes at 100% power. Do not drain. Add soup, seasonings, and cheese. Top with stuffing mix. Cook 4 minutes at 100% power.
