Piece of Cake



I decided to have fun with dinner and make a meat loaf cup cake.  The meat is the cake and mashed potatoes are the frosting.  The meat loaf part is similar to my Matty's Patty's recipe.

MEAT CAKE
  • 1.5 pounds of ground beef
  • 2 cups of sausage (I prefer HILLSHIRE FARM) finely chopped
  • 3 tablespoons of soy sauce
  • 1 sleeve of RITZ Crackers, finely chopped
  • 1 egg
  • Dash of salt and pepper

Pre Heat oven to 350 degrees.  Combine ingredients in a bowl, (I recommend using your hands).  Roll the meat into a ball and place in a greased muffin tin.  The meat should not exceed the height of the tin.  Bake for 30 minutes.

Make your favorite instant mashed potato mix and place on top of the meat.  Serve and enjoy!
