Here are some new pork recipes that I have received from my mother. These are very simple to make yet look like you spent hours in the kitchen.
PORK CHOPS AND RICE
Put desired number of pork chops in the bottom of a casserole. Cover with uncooked instant rice (1/2 inch or so). Add large slices of onion, chopped onion, or dried grated onion on top of rice. Then add 1 large and 1 medium can of whole tomatoes, chopped and undrained. Cover entire dish with a combination of soy sauce and water (1/4 cup soy sauce to ¾ cup water). Bake at 350 degrees for 2 hours. May add more liquid from time to time if rice seems too dry.
SURPRISE PACKAGES
THIS RECIPE IS FOR ONE SINGLE SERVING—increase accordingly.
• 2 slices bacon
• 1 thick cut boneless pork tenderloin slice or butterfly pork chop
• Sliced onion to cover chop
• Slice of tomato to cover chop
• ½ medium green pepper
• 1 slice of cheese
Cross 2 slices of bacon and place pork chop on top where bacon crosses. Season with salt and pepper. Stack onion, tomato, and pepper on top. Bring bacon ends to top of package and secure with toothpicks. May add more bacon slices to close the gap. Place on a grill, but not over direct coals (indirect method), and cook for 45 minutes. Place cheese on top and cook another 15 minutes.
