Chicken Dance Part III

HONEY MUSTARD BAKED CHICKEN


• 1 chicken (3 pound), cut up

• 1 stick butter or margarine, melted

• ½ cup honey

• ¼ cup Dijon mustard

• ½ teaspoon salt

• ¼ teaspoon freshly ground pepper

Preheat oven to 350 degrees. Place chicken pieces in a 9”x13” baking pan. Combine butter, honey, mustard, salt, and pepper. Spread over chicken. Bake for 1 hour, basting with the pan juices every 15 minutes, until chicken is tender and golden brown.



TEXAS TWO-STEP CHICKEN PICANTE

• 1 and ½ cups PACE PICANTE SAUCE (mild, medium, or hot)

• 3 tablespoons packed light brown sugar

• 1 tablespoon Dijon mustard

• 4 boneless, skinless chicken breasts

• 3 cups hot cooked rice

Mix picante sauce, sugar, and mustard. Place chicken in 2-quart shallow baking dish. Pour picante sauce mixture over chicken. Bake at 400 degrees for 20 minutes, or until chicken is done. Serve with rice.
