Spanish Beef and Rice

Here is another easy dish that just takes a few minutes to make.  You will need the following below:
  • 1 box of yellow rice
  • 1 can of corn
  • 1 can of black beans
  • 1/4 cup of chopped onions
  • 1 pound of ground beef
  • Taco seasoning
In a large pot, boil the rice.  In separate sauce pan mix the corn, beans, and onions.  In yet another pan, brown the ground beef, drain and add taco seasoning.  Once the rice has boiled and the water has been absorbed, combine the beef with the corn, beans, and onions into the pot of rice.  Let the ingredients simmer for about 15-20 minutes.  Enjoy!

Sausage Festival



Here is a simple dish that is quick and easy.  Just a few ingredients as well.


SAUSAGE AND PINEAPPLE

  • 3 cups of diced up sausage (I prefer Hillshire Farm)
  • 2 rice pouches (8.8 ounces per pouch) of your favorite rice
  • 1- 8 ounce can of dice pineapples 

Prepare the sausage and rice as mentioned on each of the products directions.  Combine the sausage, rice, and pineapples into a large bowl.  Stir and enjoy!

Low and Slow - Beef

The following beef recipe comes from the Fix-It and Forget-It series of cookbooks by Phyllis Pellman Good. The particular book is called "5-Ingredient Favorites" which contains recipes to be made in the crock pot.  I hope you like it.


BARBECUED ROAST BEEF
  • 4 pound beef roast
  • 1 cup ketchup
  • 1 onion, chopped
  • 3/4 cup water
  • 3 tablespoons of Worcestershire sauce
  • 3/4 cup brown sugar
Place roast in the crock pot.  In a small bowl, mix together all remaining ingredients except the brown sugar.  Pour over roast.  Cover and cook on Low for 6-7 hours.  1 hour before serving, sprinkle the brown sugar.  Enjoy!

No Soup for You!

Winter is here which makes it a perfect time for soup.  Here is a classic.


STONE SOUP


(Based on an old tale by Marcia Brown)


Brown stew beef, rolled in flour, in hot oil. Add water, beef broth, beef bouillon, tomato sauce, and LAWRY’S SEASONED SALT and pepper. Chop into chunks and add: onions, carrots, celery, and peeled potatoes. Slice cabbage and add to the mixture. Bring to a boil and simmer about 2-3 hours. One hour before the soup is done, add a handful of quick barley, and small pasta such as ditalini. If you read Marcia Brown’s award winning children’s book, you will see where this vegetable-beef soup gets its name. There are no measured ingredients—just use your judgment.

Cheeseburger Casserole



I found this easy recipe from Bisquick.  It literally is a cheeseburger without the bun.

IMPOSSIBLY EASY CHEESEBURGER PIE

  • 1 pound ground beef
  • 1 large onion, chopped (1 cup)
  • 1/2 teaspoon salt
  • 1 cup shredded cheddar cheese
  • 1/2 cup Original Bisquick mix
  • 1 cup milk
  • 2 eggs
Heat oven to 400 degrees.  Spray a 9 inch glass pie plate with cooking spray.  In a skillet, cook the beef and onion over medium-high heat, stirring frequently, until beef is cooked.  Drain the beef.  Stir in salt.  Spread in pie plate; sprinkle with cheese

Stir remaining ingredients in a medium bowl with wire whisk or fork until blended.  Pour into pie plate.

Bake about 25 minutes or until knife inserted in center comes out clean

Stuffed Meat

This is another recipe from APRON'S SIMPLE MEALS presented by PUBLIX (Publix Aprons).

CHEESE STUFFED MEATLOAVES

  • Cooking spray
  • 1-1/2 cups pasta or marinara sauce, divided
  • ½ cup Italian bread crumbs
  • 1 egg
  • ½ cup diced onions
  • 1-1/4 pounds lean ground beef, 7% fat
  • 4 sticks mozzarella string cheese
Preheat oven to 400 degrees.  Coat baking sheet with cooking spray.  Combine ¾ cup pasta or marinara sauce and remaining ingredients (except cheese) until blended.  Divide into four portions; shape around each string cheese, covering cheese completely.  Seal tightly so hot cheese will stay inside.  Bake 20-25 minutes or until a meat thermometer registers 160 degrees.  Before serving, microwave remaining ¾ cup sauce on high for 1 minute or until hot.  I serve this with cheese filled tortellini found in the refrigerator section of the grocery store.

Would You Care For Some Steak

This is a recipe from APRON'S SIMPLE MEALS presented by PUBLIX (Publix Aprons).

GRILLED STEAKS WITH ARTICHOKES

  • 1 jar (7.5 oz.) marinated artichokes, coarsely chopped
  • ½ cup red onions, thinly sliced
  • ½ cup shredded Parmesan cheese
  • 2 tablespoons refrigerated peppercorn ranch dressing
  • 2 teaspoons garlic spice paste (found in the produce section)
  • 1-1/2 -2 pounds grilling steak (ribeye, strip, or tenderloin)
  • ½ teaspoon kosher salt
  • ½ teaspoon pepper
Combine artichokes, onions, Parmesan cheese, ranch dressing, and garlic paste; set aside.  Season steaks with salt and pepper.  Place steaks on the grill and cook to your liking.  Top steaks with artichoke mixture. Cover and grill 1-2 minutes longer or until topping is warm.  Remove steaks from heat and let stand 5-10 minutes; slice and serve.

Larrito Burritos

This is an interesting twist to a burrito, this is what you will need:

  • Ground Beef
  • 1 Package of Taco Seasoning
  • 1 Can of Refried Beans
  • 1 Cup of Mexican Shredded Cheese
First, brown the beef and dispose of the fat.  Add the seasoning.  Once the seasoning is absorbed by the beef, add the beans and cheese, then stir.  You can serve with any type of tortilla with salsa.  Enjoy!

A Great Meatloaf Recipe

This is another recipe I found through Publix Grocery Stores for meatloaf. I made a few adjustments but you will just need a few ingredients:

- 1 pound or more of ground beef
- 2 eggs
- about 20 crackers of your choice (I prefer RITZ crackers)
- about 2 tablespoons of the following, diced: onions, carrots, and green peppers

Pre heat oven to 350 degrees.  In a large bowl combine beef, eggs, and vegetables, grind up the crackers and combine them.  Once you have formed all of the ingredients into a loaf, place on a greased baking sheet and cook for 35 minutes.  After the 35 minutes you can glaze the meatloaf with the BBQ sauce recipe below and put back in the oven for an additional 5 minutes, let the meatloaf cool and enjoy.

I Like Pie

This is a traditional favorite.  Perfect for this time of year.


SHEPHERD’S PIE

  • 1 pound ground beef
  • 1 chopped onion
  • ½ cup sliced carrots
  • 2 tablespoons flour
  • 2 teaspoons salt (divided)
  • ½ teaspoon pepper (divided)
  • 1 cup beef broth or onion beef broth
  • 1 (22oz.) package frozen mashed potatoes, cooked according to package directions
  • 1 large egg, lightly beaten
  • ½ cup shredded Cheddar cheese
  • Fresh parsley for garnish

Cook beef and onion in a large skillet over medium-high heat for 5-6 minutes, stirring until beef crumbles and is no longer pink.  Drain and return to skillet; add carrots.  Stir in flour, 1 teaspoon salt and ¼ teaspoon pepper.  Add broth; cook, stirring constantly for 3 minutes or until slightly thickened.  Spoon mixture into a lightly greased 11x7 inch baking dish.  Stir together cooked potatoes, egg, remaining 1 teaspoon salt, and remaining ¼ teaspoon pepper.  Spoon over beef mixture.  Bake at 350 degrees for 20 minutes.  Sprinkle with cheese and bake for 5 more minutes until cheese is melted.

Steak is Great

CHINESE FIVE-SPICE GRILLED FLANK STEAK

  • 1-2 regular sized flank steaks
  • ½ cup veggie oil
  • 1 tablespoon Chinese Five-Spice powder
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 2 tablespoons fresh thyme, chopped (may use half the amount of dried thyme)
  • 3 tablespoons honey
  • Pinch of salt and pepper

Mix all ingredients and marinate steak for at least 30 minutes.  Grill at medium temperature for 5-8 minutes per side, until desired readiness is reached.  Slice into strips and serve with grilled corn and rice.

Piece of Cake



I decided to have fun with dinner and make a meat loaf cup cake.  The meat is the cake and mashed potatoes are the frosting.  The meat loaf part is similar to my Matty's Patty's recipe.

MEAT CAKE
  • 1.5 pounds of ground beef
  • 2 cups of sausage (I prefer HILLSHIRE FARM) finely chopped
  • 3 tablespoons of soy sauce
  • 1 sleeve of RITZ Crackers, finely chopped
  • 1 egg
  • Dash of salt and pepper

Pre Heat oven to 350 degrees.  Combine ingredients in a bowl, (I recommend using your hands).  Roll the meat into a ball and place in a greased muffin tin.  The meat should not exceed the height of the tin.  Bake for 30 minutes.

Make your favorite instant mashed potato mix and place on top of the meat.  Serve and enjoy!

Chili Willy Part II

Another great chili recipe.  This time with steak.  Enjoy!



MATT’S CHILI



• ¾ pound beef top round steak, or stir fry beef

• 1 tablespoon cooking oil

• 2 cloves garlic, minced

• 1 small onion, chopped

• 1 teaspoon chili powder

• 1 can (15 oz.) chili beans with chili gravy

• 1 cup canned garbanzo beans, drained

• 2/3 cup chunky salsa

• Shredded Monterey Jack or cheddar cheese

• Corn bread squares or muffins

If using steak, partially freeze to make slicing easier. Thinly slice across the grain, into bite-size pieces. Set aside. Preheat a wok or large skillet over high heat. Add oil. Stir-fry garlic, onion, and chili powder in hot oil for 2 minutes. Add meat and stir-fry for 2 to 3 minutes or until meat is done. Stir in chili beans with gravy, garbanzo beans, and salsa. Bring the chili bean mixture to a boil. May serve in a bowl with corn bread, or over corn bread. Cover with cheese. This recipe is easily doubled.

Chili Willy

Fall is here.  The leaves are changing and so is the weather.  My mother's chili recipe will warm you up.  This would be perfect to make for the Michigan State vs. Michigan game this weekend.  Go Spartans!



ANN’S CHILI


• 1 pound ground beef

• 1 clove garlic, minced

• 1 onion, chopped

• 1 can (16 oz.) chili beans

• 1 can (16 oz.) diced tomatoes

• 1 and ½ teaspoon salt

• 1 and ½ teaspoon chili powder

Simmer beef, garlic, and onion together until beef is browned and liquid is absorbed. Add the rest of the ingredients to a large pot along with the hamburger mixture. Bring to a boil and simmer for 45 minutes. You may double this recipe. For a second dinner, serve on pasta and cover with shredded cheese.

Where's The Beef!

Well here it is!  My mother, Ann Randall, gave me some more excellent recipes which have beef in them.  Perfect for Labor Day.  Enjoy!


SHISH KABOBS AND MARINADE


• 1 cup soy sauce

• ½ cup brown sugar

• ½ cup vinegar

• ½ cup pineapple juice

• 2 teaspoons salt

• ½ teaspoon garlic powder

Mix and bring to a boil. Marinate beef cubes at least 4 hours. Place on skewers alternately with sirloin steak strips, mushrooms, green or red peppers, onions, zucchini, small corn cobs, etc. Place on grill.



STEAMING CASSEROLE

• 1 and ½ cups potatoes, peeled and cut in hunks

• 1 cup carrots, cut in hunks

• 1 cup celery, cut in pieces

• 1 pound of raw ground beef

• 1 can (16oz.) cut up tomatoes

• Salt and pepper

Arrange ingredients in layers in a greased casserole in order given. Bake about 2 hours in a 350 degree oven. Salt and pepper each layer.



CHINESE HAMBURGER CASSEROLE

• 1 pound ground beef

• ½ cup long grain rice (NOT INSTANT)

• 1 cup diced celery

• 1 small onion, diced

• ¼ teaspoon each salt and pepper

• 1 and ½ cups water

• 2 tablespoons soy sauce

• 1 can cream of mushroom soup

• 1 can cream of chicken soup

• 1 can FANCY Chinese vegetables, undrained

• 1 can Chinese noodles

Brown hamburger in a skillet. Add the rest of the ingredients except noodles. Pour into a 9”x13” casserole and cover. Bake 30 minutes at 350 degrees. Uncover, top with noodles, and bake another 30 minutes.



PORCUPINE MEATBALLS

• 1 pound lean ground beef

• 1/3 cup uncooked long grain rice (not instant)

• ¼ cup chopped onion

• ¼ cup water

• 1 teaspoon salt

• Dash of ground black pepper

• 1 can tomato soup

• ½ teaspoon chili powder

• ½ cup water

Combine the ground beef, rice, onion, ¼-cup water, salt, and pepper. Shape meat mixture into 12 to 15 meatballs. Combine the soup, chili powder, and water in a large saucepan; bring to a boil. FOR MORE LIQUID, DOUBLE THESE LAST 3 INGREDIENTS. Add meatballs; reduce heat, cover and simmer over very low heat for 1 hour. Stir occasionally. Serve over more cooked rice.



PIZZA HOT DISH

• 1 and ½ cup ground beef

• 1 onion, chopped

• 2 cups uncooked macaroni

• 2 cans pizza sauce

• ¾ cup water

• ¼ teaspoon garlic powder

• ¼ teaspoon basil

• ¼ teaspoon oregano

• 2 8oz. packages mozzarella cheese

Brown ground beef and onion together. Cook macaroni. Mix all ingredients thoroughly together and put into casserole dish. Bake at 350 degrees for 30 minutes or until hot.

THIS DISH FREEZES WELL BUT FREEZE BEFORE BAKING.



AZTEC CASSEROLE

• 12 corn tortillas

• 1 cup cream

• 1 can refried beans (large)

• 1 pound ground beef

• 1 can tomato sauce (16 oz.)

• 8 oz. Monterrey Jack cheese, shredded

In a 9”x13” casserole dish, layer tortillas, beans, meat, tomato sauce, cheese and cream three times in that order. Be sure the cheese and cream layer is last. Bake at 350 degrees for 30 minutes.



STUFFED GREEN PEPPERS

Cut off the top (stem end) of 4 or 5 large peppers. Remove the seeds and tough white membrane in each. Cook in boiling water for 5 minutes and drain. Sprinkle with salt and cool.



Brown 1 pound ground beef and 1 medium chopped onion together. Add one 16 oz. can diced tomatoes and 1 cup cooked rice. Fill each pepper with the hamburger/rice mixture. Cover with grated Parmesan cheese or buttered bread crumbs. Bake 15 minutes at 350 degrees. Raise the temperature to 400 degrees until the tops are brown.
