GROUND BEEF WRAPS

Place 4 crescent roll rectangles (2 triangles) on a cookie sheet. Place browned, seasoned hamburger, shredded cheese, and chopped onions on top. Place another crescent roll rectangle on top of the hamburger mixture. Press edges together to seal. Bake at 375 degrees for about 15 minutes. Garnish with sour cream, more cheese, scallions and sliced black olives.

Crazy Dog


CORN MUFFIN DOGS

Next time you are looking for a child friendly meal, try this.  Simply use your favorite cornbread mix and make corn muffins.  Put a 1/4 hot dog in the middle and you have a new twist to the Corn Dog.

Crunchy Chicken Salad



This great variation to the classic chicken salad will have you wanting more.  You can use this recipe as a sandwich, dip, or on top of of lettuce.
  • A 10 ounce can of chunk white chicken
  • 1 cup of corn flakes
  • 1/2 cup of finely chopped carrots
  • 1 cup of mayonnaise
  • 1 tablespoon of Dijon mustard
Add ingredients to a bowl and stir thoroughly.  Serve and enjoy!

Grilled Cheese

GRILLED CHEESE AND VEGGIE SANDWICH



• 3 tablespoons margarine or butter, softened

• 8 large sliced sourdough bread (about ¾ inch thick)

• 2-4 tablespoons honey mustard

• 1-1/2 cups broccoli coleslaw mix

• ½ cup bean sprouts, snipped

• 6 oz. sliced Havarti cheese

Spread margarine or butter over one side of each slice of bread. Turn bread over and generously brush four of the slices with honey mustard. Stir together the broccoli mix and the bean sprouts. Spoon vegetables over the mustard side of four bread slices; top each with cheese and a second piece of bread (butter side out). On a griddle or in a large skillet cook sandwiches, two at a time, over medium heat about 2 minutes or until lightly browned. Turn; cook about 2 minutes more or until golden and cheese is melted.

Crunchy Munchy

GRILLED CRUNCHY HAM SANDWICHES

• 8 slices white bread

• Butter or margarine, softened

• Prepared mustard

• 4 slices boiled ham

• 4 slices American cheese

• 1 tomato, thinly sliced

• 2 slightly beaten eggs

• 2 tablespoons milk

• Dash of onion salt

• 1-1/4 cups crushed potato chips

Spread 4 slices bread on one side with butter; spread remaining bread slices on one side with mustard. Top each mustard-spread slice with 1 slice of ham, 1 slice of cheese, 1 or 2 tomato slices, then a second slice of bread, buttered side down.

Combine eggs, milk, and onion salt. Dip sandwiches in egg mixture, then in crushed potato chips. Pat to secure chips to bread, turning to coat both sides. Brown on medium-hot, lightly greased griddle until crisp, about 8 minutes, turning once.

Ham Sandwich

GRILLED GERMAN SANDWICHES

• ¼ cup butter, softened

• 2 tablespoons prepared horseradish mustard

• 2 tablespoons finely chopped onion

• 2 teaspoons poppy seed

• 8 slices rye bread

• 4 slices boiled ham

• 4 slices Swiss cheese

Combine first 4 ingredients; spread butter mixture on both sides of each bread slice. Top each of 4 slices of bread with 1 slice of ham, 1 slice of cheese, then a second slice of bread. Brown on medium-hot griddle until cheese melts, about 10 minutes, turning once.

I Love My Sandwiches!

Try these sandwiches for your next get together.  They are awesome.

MAKE AHEAD SANDWICHES

• 2 cups chopped ham

• 1 cup grated sharp cheese

• ¼ cup pickle relish

• Mayonnaise

Combine first three ingredients, adding enough mayo to make the mixture stick together. Wrap 10 buns, filled with mixture, in foil and refrigerate or freeze. When ready to serve, bake at 350 degrees for 20 minutes or until heated thoroughly.

Sausage King



HOT SAUSAGE SANDWICH

This is a great sandwich that is very easy to make.  

Pre heat your oven to 350 degrees.  Brown your Italian sausage and cut into bite size pieces.  Take two pieces of Italian bread and add a slice of provolone cheese to each slice.  Add the sausage pieces and a heaping spoon of marinara sauce to the one slice of bread.  Place the other slice of bread on top.  Bake for 10 minutes and enjoy.

My Cousin Patty


Got beef.  Try my Patty Melt.

MATTY'S PATTY'S
  • 1 pound of ground beef (approximately)
  • 2 tablespoons of soy sauce
  • 1/4 cup of chopped red onions 
  • Dash of salt and pepper
  • Bread slices
Mix ingredients together.  Make beef patties to fill a 1/3 cup.  Broil on High for 10-15 minutes turning over once half way through.

Once the patties are cooked, turn an stove top burner on Medium High heat.  Butter a slice of bread and place butter side down on a skillet.  Add a beef patty  and another slice of bread with the butter side on top. Turn the sandwich after 2-3 minutes and repeat.  Add cheese to the patty if desired.  Enjoy!

Porky's Revenge!

BARBECUED PORK SANDWICHES

• 2.5 pounds pork shoulder blade boneless roast, cut into 1 to 2 inch chunks

• 2 medium onions, chopped

• 2 medium green peppers, chopped

• 1 can(6 oz.) tomato paste

• ½ cup packed brown sugar

• ½ cup water

• ¼ cup cider vinegar

• 3 tablespoons chili powder

• 2 teaspoons salt

• 2 teaspoons Worcestershire sauce

• 1 teaspoon dry mustard

• Hard rolls

In a 5-quart Dutch oven, combine first 11 ingredients. Over high heat, heat to boiling. Reduce heat to low; cover and simmer about 3 hours or until pork is very tender, stirring occasionally. When pork is done, skim off any fat. With a wire whisk, stir mixture until meat is shredded. Serve on hard rolls.

Delaware Cheesesteak


I wanted to make a simple dinner one night.  It is not quite a Philly Cheesesteak but it is similar.  All you needs is:
  • 1 package of roast beef
  • 1 tablespoon of Worcestershire sauce 
  • A dash of salt and pepper
  • Your favorite type of bread or bun
Place ingredients in a skillet on Medium on the stove top.  Cook for about 10 minutes and serve on a bun. You can add a slice of provolone cheese if you like.  Enjoy!

MINI REUBENS

Spread pieces of party rye bread on a cookie sheet. Spread margarine or butter on each slice of bread. Cut thinly sliced corned beef into small pieces and spread evenly across bread slices. Put a small amount of sauerkraut and Thousand Island dressing on each slice of bread. Top each slice with a small piece of Swiss cheese. Bake in a 350 degree oven until cheese melts.

Cherry Forever

MILE-HIGH MUFFULETTA

• 2 tablespoons cooking oil

• 1-1/2 cups dried tart red cherries

• ¾ cup chopped red onion

• ¾ cup red wine vinegar

• 5 cups finely shredded savoy, napa, or green cabbage

• ½ to ¾ cup light mayonnaise

• 1 12-inch loaf Italian flatbread (focaccia)

• 1 pound thinly sliced, cooked, ham, turkey, and/or turkey ham

In a medium skillet heat oil. Cook cherries and onion in hot oil about 5 minutes or until just softened, stirring often. Stir in vinegar; set mixture aside. In a medium bowl combine shredded cabbage and mayonnaise; cover and set aside.

Using a long, serrated knife carefully split the flatbread horizontally. Spoon cherry relish on the bottom slice of the bread. Layer the meat on top of the relish. Spoon cabbage mixture on top of the meat. Cover with the top half of the bread. Cut into wedges before serving.

GRILLED BEEFWICHES

• 1 tablespoon dry onion soup mix

• 1 tablespoon prepared horseradish

• Dash of pepper

• 6 tablespoons butter, softened

• 8 slices white bread

• 8 thin slices cooked roast beef

• 4 slices Swiss cheese

Soften soup mix in 1 tablespoon water. Stir soup mix, horseradish, and pepper into butter. Spread on both sides of each slice of bread. Top each of 4 slices of bread with 2 slices of beef, 1 slice of cheese, and then a second slice of bread. Brown sandwiches on a medium-hot griddle until cheese melts, about 10 minutes, turning once.

Let's Get Sloppy

This is a standard recipe for any household.  Thank you to my mother for supplying this to me.

 SLOPPY JOE'S

• 3 pounds ground beef, browned with 1 chopped onion

• ½ bottle ketchup

• ½ bottle chili sauce

• 1 can tomato soup

• 1 small can tomato sauce

• Salt and pepper

• Dash of Worcestershire sauce

• 1 green pepper, chopped

• Grated strong cheese

Simmer 20-30 minutes. Serve on hamburger buns.

TUNA DILL SANDWICH

• ½ cup MIRACLE WHIP DRESSING

• ½ teaspoon dill weed

• ¼ teaspoon pepper

• 1 or 2 cans tuna (6 oz.), drained

• ½ cup chopped red onion

• 2 tablespoons shredded carrot

• 2 English muffins, halved

• 4 slices of cheese

Stir together dressing, dill, and pepper. Add tuna, onions, and carrots—mix. For each sandwich, top one muffin half with lettuce, cheese, and tuna mixture.

Eat Your Veggies!

This is a healthy recipe for the typical hamburger.  You can substitute the ground beef for turkey.  Thanks mom for the recipe.

GARDEN BURGERS


• 1 egg white

• ¼ cup fine dry bread crumbs

• 2 tablespoons water

• ¼ cup finely shredded carrot

• ¼ cup finely chopped onion

• ¼ cup finely chopped green pepper

• ½ teaspoon salt

• 1/8 teaspoon pepper

• 2 tablespoons grated Parmesan cheese

• 1 pound lean ground beef

• Nonstick spray coating

• 1 medium tomato, sliced

• Pitas, cut in halves

In a large bowl combine egg white, bread crumbs, and water. Stir in carrot, onion, green pepper, salt, and pepper. Add Parmesan cheese and ground beef; mix well. Shape meat mixture into 4 or 5 patties.



Spray a cold grill rack with nonstick spray coating. Place rack on grill. Grill burgers on an uncovered grill directly over medium coals for 7 minutes. Turn and grill 8 to 11 minutes more or until no pink remains. Serve in a pita half with a slice of tomato.
