Rib It


I tried ribs the other day that were prepared a completely different way.  All you need are:

  • Baby back ribs
  • BBQ sauce
  • Inexpensive beer
You cut the ribs into parts of three and boil them in the beer for 30 minutes once the beer has come to a boil.  The amount of beer will depend on the amount of ribs that you will use.  You then brush the ribs with your favorite BBQ sauce and let them sit for 1-2 hours at room temperature.  Turn your grill on hot and then place the ribs on the grill, meat side down for 5 minutes.  Then turn the ribs over for another 15-20 minutes.  Be sure to keep the lid off of the grill.  Sit back and enjoy the meat.  This was a great recipe I received from my mother, Ann Randall.

Pineapple Expression



Only three ingredients and it is delicious.

PINEAPPLE PORK
  • 1 non flavored pork loin
  • 1/2 cup of brown sugar
  • 1 - 8 ounce can of pineapple chunks
Add pork loin to the crock pot.  Cover the pork loin with the brown sugar.  Pour pineapple chunks and juice on to to the pork.  Set on HIGH for 3-4 hours or until tender.  Enjoy!

Creamy Pork






Very easy to make with only a few ingredients.


CREAM OF MUSHROOM PORK

  • 1 package of sliced pork tenderloins
  • 1/2 cup of portabella mushrooms (finely chopped)
  • 2 cans of Cream of Mushroom soup

Line the crock pot with the pork tenderloins.  Add the mushrooms then soup.  Cook on LOW for 8 hours or HIGH for 3-4 hours.  You can have it with rice, pasta , or whatever your heart desires.  Enjoy!

Low and Slow - Pork

The following pork recipe comes from the Fix-It and Forget-It series of cookbooks by Phyllis Pellman Good.  The particular book is called "5-Ingredient Favorites" which contains recipes to be made in the crock pot.  I hope you like it.




FRUITED PORK
  • 2 pound boneless pork loin roast
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 cups mixed dried fruit
  • 1/2 cup apple juice
Place pork in the crock pot.  Sprinkle with salt and pepper.  Top with fruit.  Pour apple juice over top.  Cover and cook on Low 4-6 hours, or until pork is tender.  Enjoy!

Pork Fiesta Tacos

This is a Crock Pot recipe that is very easy to make with just a few ingredients. You will need the following:
  • 1 pork loin
  • 1 package of taco seasoning
  • 2 cups of water
  • hard or soft tacos
  • salsa
Combine pork loin, taco seasoning and water into the Crock Pot.  Cook on high for 2-3 hours stirring occasionally.  Serve with hard or soft tacos with salsa and any other condiments you may like.  Enjoy!

Rice is Nice



I was trying to get creative with some left overs I had in the kitchen. You will need just a few ingredients.
  • Rice (you can use a boil in the bag)
  • Sausage (sliced)
  • 1 can of black beans
Cook the rice as per instructions.  Cook the sliced sausage in a skillet until it is slightly brown.  Once both ingredients are cooked, combine all three in a pot.  Place the pot on the stove top and heat on LOW for 5 minutes.  Stir well and serve.

Porky's Revenge!

Attention tailgaters, look at this recipe for a great pork sandwich. Thanks mom for the recipe.

BARBECUED PORK SANDWICHES

• 2.5 pounds pork shoulder blade boneless roast, cut into 1 to 2 inch chunks

• 2 medium onions, chopped

• 2 medium green peppers, chopped

• 1 can(6 oz.) tomato paste

• ½ cup packed brown sugar

• ½ cup water

• ¼ cup cider vinegar

• 3 tablespoons chili powder

• 2 teaspoons salt

• 2 teaspoons Worcestershire sauce

• 1 teaspoon dry mustard

• Hard rolls

In a 5-quart Dutch oven, combine first 11 ingredients. Over high heat, heat to boiling. Reduce heat to low; cover and simmer about 3 hours or until pork is very tender, stirring occasionally. When pork is done, skim off any fat. With a wire whisk, stir mixture until meat is shredded. Serve on hard rolls.

Welcome to New Pork

Here are some new pork recipes that I have received from my mother.  These are very simple to make yet look like you spent hours in the kitchen.


PORK CHOPS AND RICE


Put desired number of pork chops in the bottom of a casserole. Cover with uncooked instant rice (1/2 inch or so). Add large slices of onion, chopped onion, or dried grated onion on top of rice. Then add 1 large and 1 medium can of whole tomatoes, chopped and undrained. Cover entire dish with a combination of soy sauce and water (1/4 cup soy sauce to ¾ cup water). Bake at 350 degrees for 2 hours. May add more liquid from time to time if rice seems too dry.



SURPRISE PACKAGES

THIS RECIPE IS FOR ONE SINGLE SERVING—increase accordingly.

• 2 slices bacon

• 1 thick cut boneless pork tenderloin slice or butterfly pork chop

• Sliced onion to cover chop

• Slice of tomato to cover chop

• ½ medium green pepper

• 1 slice of cheese

Cross 2 slices of bacon and place pork chop on top where bacon crosses. Season with salt and pepper. Stack onion, tomato, and pepper on top. Bring bacon ends to top of package and secure with toothpicks. May add more bacon slices to close the gap. Place on a grill, but not over direct coals (indirect method), and cook for 45 minutes. Place cheese on top and cook another 15 minutes.
