Pineapple Expression with Chicken


This recipe is identical to the Pineapple Pork recipe but with chicken.  I may try this with fish next time


PINEAPPLE CHICKEN
  • 2-4 chicken breasts
  • 1/2 cup of brown sugar
  • 1 - 8 ounce can of pineapple chunks
Add chicken breasts to the crock pot.  Cover the chicken breasts with the brown sugar.  Pour pineapple chunks and juice on to to the chicken.  Set on HIGH for 3-4 hours or until tender.  Enjoy!

Matt's Spicy Macaroni and Cheese

This is a classic recipe with a new twist in flavor. I prefer to use the Crock Pot because of the clean up. This is what you are going to need:

  • Elbow macaroni box
  • Butter - large spoonful
  • 1 Egg
  • Velveeta cheese - small block, cut in cubes
  • Jalapeno cheese - half block (I have only seen one size), cut in cubes
  • Cheddar cheese - shredded
  • Milk
You will notice that I don't mention specific measurements to the ingredients.  This is what makes cooking fun, go by your instinct.

Combine the elbow macaroni, butter, egg, Velveeta, jalapeno cheese, and cheddar cheese into the Crock Pot.  Pour the milk into the Crock Pot until you can see it above the other ingredients. Cook on high for about 3 hours stirring occasionally.  Enjoy!

Cake Pot


Did you think you could make a cake in a Crock Pot?  You can, and it is delicious and moist.  You just follow the directions on the desired cake mix and place into the Crock Pot.  You will set it to Low for 7-8 hours.  The cake comes out warm and moist.  What is nice is that you can add any items to the cake.  In the picture, I added fruit and whip cream.  Perfect for a Labor Day get together.  Enjoy!

Low and Slow - Pasta

The following pasta recipe comes from the Fix-It and Forget-It series of cookbooks by Phyllis Pellman Good.  The particular book is called "5-Ingredient Favorites" which contains recipes to be made in the crock pot.  I hope you like it.



CREAMY COOKER DINNER
  • 2 cups shredded cheese, your choice
  • 2 cups macaroni, uncooked
  • 3 cups milk
  • 2 -10 ounce cans of cream of mushroom soup
  • 2 cups cooked ham, or sliced hot dogs, or cooked cubed chicken, or ground beef
Place all ingredients in the crock pot.  Mix together gently, but until well blended.  Cover and cook on High for about 3 hours, or until macaroni is cooked but not not over done.  Enjoy!

Low and Slow - Beef

BARBECUED ROAST BEEF
  • 4 pound beef roast
  • 1 cup ketchup
  • 1 onion, chopped
  • 3/4 cup water
  • 3 tablespoons of Worcestershire sauce
  • 3/4 cup brown sugar
Place roast in the crock pot.  In a small bowl, mix together all remaining ingredients except the brown sugar.  Pour over roast.  Cover and cook on Low for 6-7 hours.  1 hour before serving, sprinkle the brown sugar.  Enjoy!

Easy Cheesy


Try this recipe from Group Recipes.  You can get creative with the toppings and make it your own.

EASY CHEESY BREAKFAST CASSEROLE FOR CROCK POT

  • 1 bag of hash browns (I prefer tater tots)
  • 1 lb. cooked ham, cubed (you can buy the pre cut cubes)
  • 1 medium diced onion
  • 1 green bell pepper diced
  • 1 1/2 cups shredded cheddar or Monterey Jack cheese
  • 1 dozen eggs
  • 1 cups milk
  • 1 teaspoon salt
  • 1 teaspoon pepper
Directions

Place a layer of frozen tater tots on the bottom of the crock pot, followed by a layer of ham, onions, grren peppers, and cheese.
Repeat the layering process two or three more times, ending with the layer of cheese.
Beat the eggs, milk, salt, and pepper together.
Pour over the crock pot mixture, cover and turn on low.
Cook for 10-12 hours.

BREAKFAST BAKE
  • 12 eggs
  • 2 cups shredded cheese, your choice
  • 1 cup diced cooked ham
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
Beat eggs.  Pour into crock pot.  Mix in remaining ingredients.  Cover and cook on Low for 3-4 hours.  Enjoy!

Cranberry Meatballs


I really enjoy a good meatball.  I have made several variations in the past but this combination that I thought of came out really well.  It is festive as well since cranberries are involved.  Here is the recipe.

CRANBERRY MEATBALLS
  • 1 package frozen meatballs
  • 1/2 cup maple syrup
  • 1 cup brown sugar
  • 14 ounce can cranberry sauce
Add meatballs to a Crock Pot or slow cooker.  Add the remaining ingredients on top of the meatballs.  Cook on High for 3-4 hours.  Enjoy!

  • 1 non flavored pork loin
  • 1/2 cup of brown sugar

Creamy Pork






Very easy to make with only a few ingredients.


CREAM OF MUSHROOM PORK

  • 1 package of sliced pork tenderloins
  • 1/2 cup of portabella mushrooms (finely chopped)
  • 2 cans of Cream of Mushroom soup

Line the crock pot with the pork tenderloins.  Add the mushrooms then soup.  Cook on LOW for 8 hours or HIGH for 3-4 hours.  You can have it with rice, pasta , or whatever your heart desires.  Enjoy!

FRUITED PORK
  • 2 pound boneless pork loin roast
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 cups mixed dried fruit
  • 1/2 cup apple juice
Place pork in the crock pot.  Sprinkle with salt and pepper.  Top with fruit.  Pour apple juice over top.  Cover and cook on Low 4-6 hours, or until pork is tender.  Enjoy!

Pork Fiesta Tacos

This is a Crock Pot recipe that is very easy to make with just a few ingredients. You will need the following:
  • 1 pork loin
  • 1 package of taco seasoning
  • 2 cups of water
  • hard or soft tacos
  • salsa
Combine pork loin, taco seasoning and water into the Crock Pot.  Cook on high for 2-3 hours stirring occasionally.  Serve with hard or soft tacos with salsa and any other condiments you may like.  Enjoy!

Corn Bread Bacon


Next time you want to try something different with your corn bread, add a little sausage and bacon.  I used a pre cooked turkey sausage and bacon in which were submerged in the corn bread batter.  This is what you will need.

  • Your favorite corn bread mix (I used Jiffy Corn Bread mix)
  • Turkey bacon (pre cooked)
  • Turkey sausage (pre cooked)
Cut the sausage into circles and wrap the bacon.  Bake at 350 degrees for 10 minutes to have the bacon securely wrapped around the sausage.  Prepare the corn bread mix according to the directions.  Pour the corn bread mix into a baking pan.  Add the bacon wrapped sausage on top of the corn bread mix to your desired level.  Bake at according to the directions of the corn bread mix.  Depending on how much bacon wrapped sausage, you may have to bake longer.  Let it cool for 5 minutes and enjoy!

Crock Pot Corn Bread


I wanted to see if I could make corn bread in a crock pot.  I didn't just want corn bread, but I wanted to chili as well.  I decided to try it and it came out great.  This is what you will need.

  • Your favorite chili (you can use canned chili)
  • Your favorite corn bread mix (I used Jiffy Corn Bread mix)
You place the chili in the crock pot.  You do not want to fill the crock pot more than half way with the chili.  You make the corn bread batter as directed.  You can add cheese, jalapenos or canned corn into the corn bread batter if you would like.  You pour the corn bread batter over the chili in the crock pot.  Place the crock pot on high for 2-3 hours and enjoy.

HONEY MUSTARD CHICKEN
  • 8 boneless, skinless chicken breast halves
  • 1 1/2 cups honey mustard dressing
  • 1/2 cup water
Spray the inside of the crock pot with a non-stick cooking spray.  Cut the chicken into approximately 2 inch pieces.  Place in the crock pot.  In a separate bowl, mix together the dressing and water.  Pour over chicken pieces.  Cover and cook on High 3-4 hours, or on Low 6-7 hours.  Enjoy!

PINEAPPLE TAPIOCA
  • 2 1/2 cups water
  • 2 1/2 cups pineapple juice
  • 1/2 cup dry small pearl tapioca
  • 1 cup sugar
  • 15 ounce can crushed pineapple, undrained
Mix first four ingredients together in the crock pot.  Cover and cook on High for 3 hours.  Stir in crushed pineapple.  Chill for several hours.  Enjoy!

New Stuff


Thanksgiving is almost here.  Most of you will probably have stuffing with your feast.  I recently made stuffing   in the crock pot and it was excellent.  All you have to do is prepare the stuffing as you normally would.  Instead of baking the stuffing you could add it to the crock pot for 4 hours on High or 8 hours on Low.  I added turkey and broccoli to my crock pot concoction.  It is all about getting creative.
