This is a traditional favorite. Perfect for this time of year.
SHEPHERD’S PIE
- 1 pound ground beef
- 1 chopped onion
- ½ cup sliced carrots
- 2 tablespoons flour
- 2 teaspoons salt (divided)
- ½ teaspoon pepper (divided)
- 1 cup beef broth or onion beef broth
- 1 (22oz.) package frozen mashed potatoes, cooked according to package directions
- 1 large egg, lightly beaten
- ½ cup shredded Cheddar cheese
- Fresh parsley for garnish
Cook beef and onion in a large skillet over medium-high heat for 5-6 minutes, stirring until beef crumbles and is no longer pink. Drain and return to skillet; add carrots. Stir in flour, 1 teaspoon salt and ¼ teaspoon pepper. Add broth; cook, stirring constantly for 3 minutes or until slightly thickened. Spoon mixture into a lightly greased 11x7 inch baking dish. Stir together cooked potatoes, egg, remaining 1 teaspoon salt, and remaining ¼ teaspoon pepper. Spoon over beef mixture. Bake at 350 degrees for 20 minutes. Sprinkle with cheese and bake for 5 more minutes until cheese is melted.
