Mini Potato



Simple and hearty side dish.


FINGERLING POTATOES

  • 1.5 pounds fingerling potatoes (or any small potato)
  • 1 Tablespoon Chicago seasoning
  • 3 Tablespoons olive oil
  • Salt and pepper to taste
Wash , dry and pierce potatoes with a fork.  Place in a zip lock bag along with the rest of the ingredients.  Shake and let sit an hour or so.  Bake on an aluminum foil lined cookie sheet.  Bake in a 400-degree oven for 30 minutes, flipping after 15 minutes.
