Here is another simple stir fry recipe.
SHRIMP AND ARTICHOKE STIR-FRY
Cook scallions in hot oil in a wok. Remove and cook raw shrimp that have been peeled and deveined. Put scallions back in the wok with the shrimp. Add 1 can (16 oz.) diced tomatoes and halved or quartered artichoke hearts (16 oz can). Warm and serve over angel hair pasta. May sprinkle Parmesan cheese on top.
