Grilled Cheese

GRILLED CHEESE AND VEGGIE SANDWICH



• 3 tablespoons margarine or butter, softened

• 8 large sliced sourdough bread (about ¾ inch thick)

• 2-4 tablespoons honey mustard

• 1-1/2 cups broccoli coleslaw mix

• ½ cup bean sprouts, snipped

• 6 oz. sliced Havarti cheese

Spread margarine or butter over one side of each slice of bread. Turn bread over and generously brush four of the slices with honey mustard. Stir together the broccoli mix and the bean sprouts. Spoon vegetables over the mustard side of four bread slices; top each with cheese and a second piece of bread (butter side out). On a griddle or in a large skillet cook sandwiches, two at a time, over medium heat about 2 minutes or until lightly browned. Turn; cook about 2 minutes more or until golden and cheese is melted.

This sandwich is happening in my near future. I love the havarti cheese for it to really bind everything together and give it a buttery strong flavor.
