You Say Potato

The next five recipes have a potato based content.  These creations are from my mother.


POTATOES AU GRATIN

• 3 tablespoons butter or margarine

• 5 or 6 medium potatoes, peeled and thinly sliced (about 6 cups)

• 1 and ½ teaspoons salt

• 1 package (4 oz.) shredded Cheddar cheese (1 cup)

• ½ cup fresh bread crumbs

Preheat oven to 425 degrees. In a 12”x8” baking pan, melt butter in oven. Remove and add potatoes and salt; toss together and arrange potatoes in even layer in baking pan. Sprinkle with cheese and bread crumbs. Cover with foil. Bake 20 minutes; uncover and bake 15 minutes more or until potatoes are tender.
