I know the Holidays are over but these cookies are fantastic.

RUSSIAN TEACAKES (thumbprint cookies)

• 1 cup butter or margarine

• ½ cup confectioners sugar

• 1 teaspoon vanilla

• 2-1/4 cups flour

• ¼ teaspoon salt

• ¾ cups chopped nuts, optional

Heat oven to 400 degrees. Mix butter, sugar, and vanilla thoroughly. Work in flour, salt and nuts (if desired) until dough holds together. Shape dough into 1 inch balls. Place on ungreased baking sheet. Bake 10-12 minutes or until set but not brown. While warm, press thumb in center of cookie and fill with red raspberry jelly or preserves. Roll in confectioners sugar.
