Low and Slow - Pork

The following pork recipe comes from the Fix-It and Forget-It series of cookbooks by Phyllis Pellman Good.  The particular book is called "5-Ingredient Favorites" which contains recipes to be made in the crock pot.  I hope you like it.




FRUITED PORK
  • 2 pound boneless pork loin roast
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 cups mixed dried fruit
  • 1/2 cup apple juice
Place pork in the crock pot.  Sprinkle with salt and pepper.  Top with fruit.  Pour apple juice over top.  Cover and cook on Low 4-6 hours, or until pork is tender.  Enjoy!
