A Salad That Changes Lives

SUGAR SNAP PEAS AND HEARTS OF PALM SALAD



(This is a JENNY CRAIG recipe)


• 1 cup sugar snap peas

• 2 cups torn Boston or Butter lettuce

• 2 cups Romaine lettuce

• 1 cup sliced canned hearts of palm, drained

• ¼ cup sliced green onions

• Honey-Orange Vinaigrette

Arrange peas in a vegetable steamer over boiling water. Cover and steam 1 minute or until peas are crisp-tender. Set aside, and let cool. Combine peas, lettuce, and next 3 ingredients in a large bowl; mix well. Pour Honey-Orange Vinaigrette (BELOW) over lettuce mixture; toss gently. THIS IS A WONDERFUL SALAD!! HONEY-ORANGE VINAIGRETTE


• 2 tablespoons cider vinegar

• 2 tablespoons unsweetened orange juice

• 1 tablespoon honey

• 2 teaspoons vegetable oil

• 1/8 teaspoon onion powder

• 1/8 teaspoon ground red pepper

Combine all ingredients in a small bowl, stirring with a wire whisk. Pour over above salad.
