A fantastic dish provided by Jessica Meiczinger of Simply Divine Events .
SHRIMP AND GRITS
Great Appetizer or main dish
- 1 cup Yellow Grits
- 4 cups of Water
- 1 teaspoon of salt
- Pepper to taste
- ½ a bunch of Green Onion chopped
- 1 tablespoon of butter
- 1 cup of cheddar cheese shredded
- ½ to 1 bottle of BBQ Sauce
- A couple dashes of hot sauce
- 1 ½ pounds of Shrimp: peeled and deveined
- 2-3 tablespoon of olive oil
- Salt and pepper
- 1 tablespoon of garlic
Bring 4 cups of water and 1 tsp. of salt to a rapid boil. Whisk in 1 cup of grits. Cook and stir until boiling. Cover and reduce heat to low, and continue cooking 5-6 minutes, stirring occasionally. Stir in 1 tablespoon of butter, the chopped green onion and the cheese. You might have to add a little salt and pepper to taste.
For the Shrimp:
Heat 2-3 tablespoon of olive oil in a saut'e pan over medium heat. Add garlic and Shrimp. Cook until pink. Add BBQ sauce and hot sauce.
To serve: Spoon out grits and then top with the shrimp
