Black Beans



This is a simple dish yet full of flavor.  Thank you Julie Wert for providing me the recipe.



BLACK BEANS AND RICE
  • 1 onion
  • 2-3 cloves of garlic
  • 1-2 carrots
  • 1 stick of celery
  • 1 jalapeno pepper
  • 1 bell pepper (red, yellow, or green)
  • 1 can of diced tomatoes
  • 1 teaspoon of oregano
  • 1 tablespoon of crushed cumin seed
  • 2-3 cans of black beans
  • 2 cups of brown rice
  • 1 envelope of Vigo Flavoring and Coloring
Chop the onion, garlic, carrots, jalapeno pepper, and bell pepper.  Once chopped add to a saucepan and saute' in olive oil.  Add the oregano and cumin.  Then add the tomatoes.  Simmer for 10-15 minutes then add the cans of black beans.  Simmer for another 10-15 minutes.

Serve over rice that you’ve added 1 envelope of Vigo Flavoring and Coloring to cooking water.  You can also add meat, like leftover ham or pork, or sausage to taste.
