BLACK BEANS AND RICE
- 1 onion
- 2-3 cloves of garlic
- 1-2 carrots
- 1 stick of celery
- 1 jalapeno pepper
- 1 bell pepper (red, yellow, or green)
- 1 can of diced tomatoes
- 1 teaspoon of oregano
- 1 tablespoon of crushed cumin seed
- 2-3 cans of black beans
- 2 cups of brown rice
- 1 envelope of Vigo Flavoring and Coloring
Chop the onion, garlic, carrots, jalapeno pepper, and bell pepper. Once chopped add to a saucepan and saute' in olive oil. Add the oregano and cumin. Then add the tomatoes. Simmer for 10-15 minutes then add the cans of black beans. Simmer for another 10-15 minutes.
Serve over rice that you’ve added 1 envelope of Vigo Flavoring and Coloring to cooking water. You can also add meat, like leftover ham or pork, or sausage to taste.
