The Big Shrimp

Here is a simple stir fry recipe from my mother that is very basic in nature.  You do not have to use a wok, a large skillet would be fine.


BROCCOLI, NOODLE, AND SHRIMP STIR-FRY


• 1 package (3 oz.) oriental noodle mix

• 2 teaspoons cornstarch

• 1 and ½ teaspoons soy sauce

• 1 teaspoon rice or white vinegar

• 1/8 teaspoon crushed red pepper

• 1 tablespoon sesame oil

• 1 tablespoon cooking oil

• 2 cups broccoli flowerets

• Bias-sliced carrots (about ½ cup)

• 1 pound raw shrimp, peeled and deveined

Break noodles into pieces; reserve seasoning packet. Place noodles in a 1-quart microwave-safe casserole. Add 1 cup of warm water. Micro-cook, uncovered, on 100% power for 2.5-3 minutes or until noodles are softened, stirring twice; drain.

For sauce, in a small bowl combine seasoning packet, 2/3 cup cold water, cornstarch, soy sauce, vinegar, and red pepper. Set aside.

In a large skillet, or wok heat sesame and cooking oil over medium high heat. Add raw shrimp and stir fry until done. Take out and set aside. Add a bit more oil and broccoli; stir-fry 3 to 4 minutes or until crisp tender. Stir sauce; add sauce, noodles, and shrimp to skillet or wok. Cook and stir until bubbly and heated through; cook and stir 1 minute more.
